- - Amazingly, cattails can and have also been used as a food and medicine source! In the spring, young shoots can be peeled and eaten like a vegetable, the taste reminiscent of cucumbers. The core of the rootstock can be either eaten like a potato or ground into a starch and used similarly to cornstarch. The jelly from cattails has antiseptic properties that can relieve inflammation and pain, and its burned ashes can also be applied to wounds to prevent them from getting infected. And most recently, scientists have been experimenting with using cattails as biofuel and using their ability to absorb nitrogen-fixing bacteria in their roots to clean up contaminated sites.

From the cattail, we can observe just how much an unsuspecting plant like “nature’s corndog” can be. Let us be reminded that every one of us has a special talent and purpose, even if it isn’t something that you would think it would be!
